My Girl

Sweetie. Girlie. Scooter...We have lots of little names for Gracelynn depending on the mood, time, or even whether it's me or Heath saying it.

However - it's a given that every single day, I greet my little girl from her naps with:
"My Girl! How's my girl?"
Just a little endearing phrase I'd like to remember when she's not so little anymore...

Bruschetta Fix

I know I know.
You'd think I could at least blog consistently.
Yeah. Right!

Anyway - bruschetta and an alfredo chicken bake were on the menu for supper tonight. I absolutely love the whole process of making bruschetta...right down to the eating bruschetta! (Although, somehow, I remember the bruschetta in Germany and Austria to be so much better than mine... :)

No - my camera is just a wanna-be, but I've been on a "expand my recipes" kick so I thought I'd take a picture for you all of the newest bruschetta recipe!

Bruschetta with Tomato and Avocado

Gracelynn loves avocados and tomatoes...so she thought the arrangement of bruschetta on the table was hers. Sorry girlie! Too much olive oil for you! She didn't get any bread either because homemade foccacia is too stiff for her to chew. :( But - I did save some plain avocado and tomatoes for her! This is her camera-shy sign for "more".

She dug into her chicken alfredo after she finished up her baby version of bruschetta, but couldn't get over how it all stuck to her fingers!

She's literally trying to wipe it off here!
(She's really wanting to get it off and get the meal over because she knows it's bathtime!)

Just in case...

Bruschetta with Tomato and Avocado

1/2 loaf whole-grain French, ciabatta or other thin loaf bread (we always use homemade foccacia)
3 Tbsp extra virgin olive oil, divided
1 cup fresh tomatoes, chopped
3 cloves garlic, passed through a garlic press
1 tsp sea salt
1 tsp freshly ground black pepper
1 handful fresh basil leaves, finely chopped
2 Tbsp balsamic vinegar
2 fresh avocados
Juice of 1/2 fresh lemon (or a spritz of lemon juice)

Preheat oven to 375º F / 190 ºC. Line a baking sheet with parchment paper. Slice bread into thin, 1/2-inch slices on the diagonal. Arrange slices on baking sheet. Don’t overlap. Use another baking sheet if necessary. Use a baking brush to lightly coat each piece of bread with olive oil. Bake for several minutes or until lightly toasted. Remove from oven. Set aside.
 In a medium-sized oven-safe mixing bowl combine tomato, remaining olive oil, garlic, salt and pepper. Place in hot oven and bake for 10 minutes or until tomatoes are soft. Remove from heat.
 Transfer cooked tomatoes to new mixing bowl. Add basil and balsamic vinegar. Mix gently to combine. Set aside. Peel avocados. Cut in half and remove pits. Dice avocado and toss with lemon juice. *I learned this just recently...cut your avocado in half and then press over a cookie sheet...literally, they'll come out all cubed and ready! No peeling or dicing! Top each piece of bread with tomato mixture. Top with avocado. Serve.

Naughty Climber...

Gracelynn has recently added a new element to her climbing skills without warning me:

Yes, I've already hugged and kissed away a lot of bumps and probably bruises after I hear a tumble and a wail. She's a very adept climber and has been for some time...what she fails to realize is that when Mommy comes running and says, "NOOO sit DOWN!!!" it's because whatever she's climbed on is not for standing. Although - I will admit - she's gotten quite good at standing and balancing on a rocker...

I've narratated what I think must be going on in her head:
Gracelynn: Oooh! This will make me taller and I can see outside better..."Wobble wobble, crash!
Mommy
: Gracelynn? What are you doing!?
Wail!
Mommy
: Here sweetie...hug...all better!
Gracelynn: Why didn't that work? I'll have to try again...

How do I look?

Must-Try Recipe!

I made this dish last night and it is totally a must try EAT dish! Heath and Gracelynn chowed down on it and it's completely gone today!

Southwestern Veggie Bake
  • 3 medium carrots, sliced
  • 1 small onion, chopped
  • 2-3 tsp. chili powder
  • 1 tsp. ground cumin
  • 1/4 tsp. cayenne pepper
  • 2+ Tbsp. butter (I use this liberally!)
  • 3 Tbs. flour
  • 1/2 c. milk
  • 1 can kidney beans (rinsed, drained)
  • 1 can black beans (rinsed, drained)
  • 1 can whole kernel corn (drained)
  • 1 can diced tomatoes - or fresh
  • 1 can refried beans
  • chopped green chilies (I like assorted peppers)
In a large skillet, saute the carrots and onion in butter and seasonings until veggies are crisp-tender. Stir in flour until blended. *We Kelleys like our "sauces" thick...so I tend to add a lot more flour/milk then called for. Gradually add milk. Bring to a boil; cook and stir for 2 min. or until thick and bubbly. Remove from the heat; add beans, corn, tomatoes, and chilies. Spoon into an ungreased 13x9x2" baking dish. Bake uncovered at 350 for 20-25 minutes. ENJOY!

So...yes, there's supposed to be these cornbread twists on top, but obviously, I opted out because I didn't have any corn flour in my cupboard. Might be fun to try - we liked it more as a Mexican dish. Heath and I also decided - that it would be perfect for large party gatherings as either a "twist" on enchilada filling, a chip-dip, or a warm side-dish.

If you like Mexican - or anything with beans - you'll so love this!

What's For Breakfast?

Despite ear infections and nasty colds...
Gracelynn has been eating us out of house and home lately!
Yesterday's breakfast consisted of:
2 scrambled eggs
1 peanut butter sandwhich
milk


Today's breakfast was
1 whole banana
1 Kelley-style waffle
milk
And for those of you who have never seen or tasted a Kelley waffle...they are over 1" thick, 100% made-from-scratch, and aaa-mazing!

(I can't take credit for the recipe though...it's been passed down from Moeller, to Warnke, to Snitker, and now to Kelley)

Sledding Day

Is anyone feeling like Mother Nature is pulling a nasty prank on us? This warm weather has me looking around for tulips popping out of the ground! Even Gracelynn was excited to go sledding today. (Although, if you ask me, it was more snowman/fort building weather rather than..."Mommy, pull me through the sticky snow" weather)

Heath and I took Sam and Gracelynn to the park this afternoon for a romp. Gracelynn's boots are too heavy and her layers too "marshmallowy" for her to get anywhere...but Sam was so loving it!

Sorry, we didn't take pictures because I was too busy pulling Gracelynn around and Heath had his hands full keeping Sam occupied enough not to notice the family of sledders over the hill! As it was, he managed to politely introduce himself to a dainty little jogger...lol.

Well - if you haven't already, at least go outside and breathe in some fresh "spring-like" air! I fear it won't be around for long. :(

And finally...in honor of Valentine's Day - here is little scooter last year at this time! (I should have taken another picture today! I'll take one tomorrow and make it official...)

Table Manners

Nothing sounds yummier to Gracelynn than hot ham and cheese sandwiches on a cold day! This week she graduated from the "baby" booster seat to the "big girl" booster seat.


We started teaching her to sign and she's really taken off lately!


PLEASE was the first sign we taught and though it was lovely to have her submissively signing "please"...it was disastrous when "please" meant "I'm starving" instead. Haha. So, we started showing her "hungry", "more", and "all done". If we had known what a difference "all done" would make in her table manners, we would have done our darndest to teach her 6 months ago!

She is now perfectly content to eat right up on the table, off of a plate, next to Mommy & Daddy. (She's not all that great about her milk cup yet...sometimes she misses the table when she puts it back down...whups!)



She's been saying "Mamma" and "Daaa--eee" for quite a while, but now we're starting to discern "M'eh" means "Milk", "Baa" means "Bath", "Ni" means "Nite Nite", and an occasional "Am!" means "Sam!".

It's naptime - nite nite for now!

The Snitker Toe

I'll pretend it hasn't been at least a month since I've posted...
It all started around the holidays - if we weren't traveling, we were battling the flu, viruses, and bugs (don't worry, sick bugs, not literal bugs!).

After Christmas, Gracelynn managed to catch a cold that she still hasn't fully shaken. We discovered she had ear infection last week - after some medicine, she's finally feeling much more like her old self. :)
My brother, his wife, and their daughter came to visit this weekend during the Super Bowl! We were so excited to see them. :) Little Ray is starting to roll over and I guess, learned the art of "jabber" from Gracelynn. Lol.
We also discovered - after Uncle Andrew's close inspection - that both of our girls have a
giant...
big...
toe.


I loved having my niece visit! It's hard to believe kids grow so fast...
